Over the last few weeks we have been trialling sending our yummy cupcakes by ordinary mail and are very happy with the results. When parcels go by ordinary mail the parcels are sorted by machine and so are tumbled around but despite this the damage was very little as you will see from these pictures.

It is now 3 and a half months since we launched UK Delivery Cupcakes and as I was sorting through my emails I realised I just had to start to sort them into Local Cake Deliveries and UK Cake Deliveries as there were just too many! Well I have just finished sorting them and am quite stunned to realise that in just over 3 months we have sent out 57 boxes of Cupcakes and Birthday Cakes, I am nicely amazed. Continue reading
This is my favourite recipe for scones and I find they freeze very well.
This recipe makes a very short, melt in the mouth pastry ideal for sweet pastries and pies.
Put your hands in cold water to cool them down then rub the flour, Cookeen and butter into breadcrumbs. Add the beaten egg yolk and then water by the drop until the pastry just forms into a dough, put the pastry in the fridge for 20 minutes or so before using.
Firstly, apologies for the quality of the icing in some of these pics, the icing had been in the fridge and I did not have time to wait until it warmed up.
When I was first trying to work out which nozzles to use I could not find much information on the internet so I thought I would do some pictures of nozzles and show how they ice.

I have been pleased with the response to my little icing tutorials and one of my trusty followers, food blogger Victoria of www.ilovemealplans.com has sent me some great pictures of what she achieved after following my tutorial Decorating Cupcakes With Piped Buttercream I.
I am really impressed and have to say her photos are really lovely, hope you agree too. Victoria also made a great 90th birthday cake for her grandad using the same technique which you can see here on her food blog.
